Here are some recipes we think you'll enjoy. If you have any especially good recipes which use our smoked salmon, please let us know about them and we'll add it to our website.

Smoked Salmon Salad

1 pound smoked salmon
1/2 cup sour cream
1/3 cup cucumber, peeled, seeded and diced
1/4 cup almonds, slivered
2 Tbsp. chives, chopped
1/2 tsp. salt
1/8 tsp. white pepper
1/2 tsp. dill weed

Cut salmon into bite-size pieces. Toss gently with sour cream, cucumber, almonds, chives, slat, pepper and dill.
Heap into lettuce cups.


Salmon Artichoke Tidbits

1 cup smoked salmon, flaked
4 eggs
1/2 pound cheddar cheese, grated 2 6 oz. cans marinated artichoke hearts, drained and chopped
3 green onions, finely chopped
12 saltine crackers, crushed

Mix all ingredients thoroughly. Place in a buttered 9 inch baking pan. Bake at 325s¹ for 1 hour. Cut into 32 tidbits.


Salmon Chowder

1 cup smoked salmon, cut into chunks
2 Tbsp. butter
1/2 cup chopped onions
1/4 cup sliced celery
1 can diced potatoes
2 Tbsp. flour
1-1/4 cups chicken broth
1/4 cup sour cream
1 tsp. fresh dill, minced, or dill weed
1/8 tsp. pepper
1 Tbsp. chopped parsley

In a saucepan, melt butter, saute onion, celery. Stir in flour, add bouillon, potato and cook over medium heat, stirring constantly unitl reaching boiling point. Add sour cream, dill, pepper, smoked salmon. Heat 2-3 minutes, stirring constantly. Add parsley before serving. Makes 3-4 servings. Bon Appetit!



Here is a Potato-Less version of our chowder, we think both are delicious!


Salmon Chowder

Smoked Salmon with Dill Dip

Serve smoked salmon on wheat thins crackers with a little dollop of dill dip.
(Dill dip: ½ cup mayo, ½ cup sour cream, 2 Tbsp Dijon mustard, 1-1/2 tsp. dried dill. Mix together.)

Salmon Sandwich Spread

6-8 oz. Smoked Sockeye Salmon
red and green pepper, chopped
onion, chopped
2 hard boiled eggs
sweet relish
salad dressing
½ fresh tomato.
Mix well.

Sauteed Smoked Salmon and Pasta

Saute onion, salt and pepper, garlic. Add canned tomatoes and chick peas.
Prepare pasta Mix all together. Add salmon, crumbled. Serve warm or cold, thoroughly mixed.

Salmon Rounds Appetizer

Cocktail rye bread (2”x2”)
Cream Cheese
Capers
Diced Red Onion
Dice Hard Cooked Egg
Kasilof Smoked Salmon
Top rye bread with any or all condiments, ending with Kasilof Smoked Salmon.

Salmon Bites

4 hardboiled eggs
? tsp capers
1/3 to ? cup mayonnaise
Crackers
Parsley
Mash eggs and mix with capers and mayo. Spread on WASA crisp bread or crackers and top with Kasilof Smoked Salmon. Garnish with parsley.

Smoked Salmon Spread

In food processor combine 1tsp fresh mint, 1 tsp fresh cilantro, 1 tsp fresh or dried dill. Add 4 oz reduced fat cream cheese and 4-6 ounces Kasilof Smoked Salmon. Process until smooth. Spread on crackers or bread.

Stuffed Jalapenos

Mix 2 cups Kasilof Smoked Salmon, ? cup finely chopped onions. Cut jalapeno peppers in half lengthwise and remove seeds and membranes.
(You could also use canned jalapenos.) Stuff Smoke Salmon mixture into jalapenos.

Salmon Spread

6-8 oz Kasilof Smoked Salmon
8 oz cream cheese
6-8 oz sour cream
3-4 green onions
Chop onions. Mix well with cream cheese and sour cream. Adjust to taste. Add cayenne pepper to taste. Serve with Ritz crackers.

Salad

Serve with a “slaw” made of thinly sliced fresh fennel dressed with olive oil, lemon juice, salt and pepper, and pumpernickel bread.

Main Dish

Salmon and Tomatoes
Simmer at medium low for 1 hour:
Kasilof Smoked Salmon,
1 cup onion
fresh garlic to taste
1 14-oz can chopped or stewed tomatoes.
Serve over hot white rice.

Salmon Wrap

In a flour tortilla pile arugula, cream cheese, sweet Vidalia onion (chopped) and Kasilof Smoked Salmon.

Salmon Patties

3.5 oz can Kasilof Smoke Salmon
1 dozen soda crackers
salt and pepper
grated onion
1 egg, beaten
parsley flakes
Crush crackers, and mix with all other ingredients. Shape into patties and cook in non-stick pan coated with canola oil. Brown well then turn and cook other side.

Salmon Alfredo

3 oz cream cheese
16 oz half and half
8 oz heavy cream
4 oz sour cream
Combine above ingredients in double boiler. Heat to near boiling, whisk gently, adding ? cup flaked Kasilof Smoked Salmon
? tsp dill weed.
Pour over cooked hot pasta, and top with Parmesan cheese.

Smoked Salmon Primavera

1 lb pasta, cooked
? lb snow peas or frozen peas
1 roasted pepper, chopped
10 oz Kasilof Smoked Salmon
1 cup heavy cream
Garlic
Olive Oil
Parsley
Saute garlic, peas and pepper in oil for 1-2 minutes. Add cream. Bring to near boil and simmer 2-3 minutes, stirring. Add cooked pasta and ? cup grated parmesan cheese and Kkasilof Smoked Salmon; gently fold together. Garnish with salt and pepper, parsley flakes and/or red pepper flakes, to taste.

Smoked Salmon Fried Rice

2-3 T canola oil (divided)
1-2 eggs, beaten
a small onion, chopped
one green onion, chopped
? c cooked peas
4 oz smoked salmon, flaked
2-4 c cooked rice
salt and pepper
In a Tablespoon of oil, cook egg(s); remove, set aside. Add 1 T oil; sauté onions. Stir in salmon, rice, peas, scrambled eggs. Toss and stir, cook till heated through. Salt and pepper to taste.

Stuffed Peppers

Mix Kasilof Smoked Salmon and cream cheese. Add 2 cloves garlic and ? pureed onion. Stuff into small sweet peppers and BBQ.
